It is added to the grain bill to enhance grainy, cereal like flavours and to improve head retention and foam stability, which is particularly desirable in dark ales and richer malt focused styles. Crushed barley can also be used to partially replace wheat in recipes where wheat is normally used to build body and head retention, such as New England IPAs, wheat beers and saisons, while still keeping the desired texture and foam properties.
