Sodium Citrate is an excellent Flavour Enhancer because it will drive any flavour that it is added to. With only a very small amount of Sodium Citrate you can add sourness and saltiness to your recipe, if you add a bit of sugar, for sweetness, that is three out of four of the main tastes that will make any flavour really pop.
